Very few events in our lives can be accurately represented as truly life changing. Of course, there's the typical: marriage, children, career choices that took us from place to place.
But then there was our decision a few years back to retire to Costa Rica. That was a biggie.
And now to celebrate our the first anniversary of that move, we made a huge - and truly life-changing - dietary change when we adopted a vegan diet. That, in a country where, albeit small portions, of beef, pork, chicken, fish, and dairy products make their way into most meals. Rather like the U.S. (except that the animal product portions are smaller here and we're flying without the safety net of commercial vegetarian products available in the U.S.)
If we are nothing else, we are both creative and determined - two attributes that we hope will help us along this new path.
